Gas Range is Overheating

I have been having a constant problem with my gas stove overheating. There have been several days when I have set my temperature to 300 or 350 degres and every time it overheats by as much as 50 to 100 degrees. The temperature difference is never the same, so I can't just adjust it by turning the temperature down 50 degrees or so.

What do you think could be causing this problem. Could it be that the thermostat needs to be replaced, and is this an item that I can do myself. About a year ago, I replaced the heating element on this same oven.
