Ruff edge on countertop

My new countertops have wood trim on the edges that were cut on a angle. The laminate was applied after the cut was made. Consequently, in some areas the laminate protrudes past the wood. This creates a lip that will become a place for food and bacteria to grow. My question is. Can I safely samd the edge of laminate down to make it even with the wood? Whaat should I use? Thank for Your Help
