It seems to me that until you replace the 1/2 inch supply line that you will still be restricting flow. The only real advantage to the larger pipe run, is it is less likely for a toilet flush to effect the temperature of a running shower, but for most things you won't see a difference with the 1/2" in place at the source.

Your well and pump will only produce what they can. If your draw exceeds capacity, you will get that shower scald syndrome again... If you have problems with preasure you might consider a bladder tank to build and hold a reserve.
