Michael,
It sounds like there is a problem with the thermostat. That is a gas valve of sorts.. that is under the knob that you adjust the oven temperature with. All ovens are a little different, but if you are good with tools, understand how to put together gas piping and how to test for leaks, it isn't too hard to replace and most of the time the thermostat can be purchased with the model and serial number from the range.
Off of the thermostat is a 'cap tube' and sensor that goes to the oven cavity, so you might have to take quite a bit of the oven apart to get the job done. If you have ANY discomfort with working with gas piping or disassembling a range, you SHOULD call a pro. Simple as that. Mistakes made in the installation of this device CAN create a leak that could blow up your home.
