A Handyman Helping Hand

We are in the process of stripping all of our bedroom floors down to the sub flooring in order to install hardwood. After taking the baseboard molding off, it appears that in areas there is a gap between where the wall and floor meet. I seem to have heard somewhere that this could be caulked. Does caulking serve any purpose? If so, what type of caulking should be used. Also, there are some gaps between some of the sheets of sub flooring. Can these be caulked also?
