I have had similar problems. We replaced the ice maker. However, the issue may be your saddle valve. It was explained to me that self tapping saddle valves will "crud" up and reduce the flow. When the water flow is reduced the ice maker "cruds up". Hence, causing problems. I replaced the self tapping saddle valve with a valve. You have to drill a inch hole in the pipe which will let the water flow much better. The rest of the hook up is the same. Several years later no problems. Your local hardware store or plumbers shop should have these valves. HD does not carry them. (at least not the one by me).
