The way I would tackle this project is to chip away the tiles, grout and mortar around the edges of the opening until you get to the desired new opening. Use a masonry chisell. Then use a sawzall or jig-saw to cut out the plywood board to enlarge the opening. Retile around the edges to give it a clean edge. Place your stove in the new opening and caulk to finish off your project.
