My hardwood floor person told me to put one coat of paint on everything (walls and trim). Once the floor was done put the finish coat. We took the time to put down heavy paper over the entire floor. It worked out well. The carpet person told us the same thing except he had us finish everything except the final coat on the baseboards. If the hardwood is prefinished you may be able to get away with finish coats on the walls and just touch up any problems in baseboard trim. Latex paint can be wiped off most finished floors so if you get a drip it can be cleaned up.
