Plastic pipe has become the prefered installation material in many areas because of the speed of installation. It's just easier to work with. There are different grades of pipe and fittings, some made for cold water and some made for hot. When the proper material and installtion is applied to the job, plastic will server you well. Climate doesn't really matter... if the pipe might freeze from exposure... plastic and copper both have to be heated and or insulated to prevent freezing.

I don't have a strong preference for either one except I can install 4 times the plumbing in the same amount of time when using plastic instead of copper. The only time I use copper is when I am concerned about rigidity where the pipe might be exposed to 'physical abuse'.
